Last Will & Testament

Tyson’s last will and testament is incredibly bare bones.
Most of his actual assets are tied up with the web, which upon his death will remain there, and aren’t exactly something Tyson wants to draw too much legal attention towards unnecessarily.
The family manor will go over to Jethro as will a large portion of his share of the family fortune, whilst his dogs and another large sum of money will go to Jasmine. The remainder of Tyson’s money will go to his Godson, Carver Ironwright, and to charity.
The only surprising part - or perhaps not if one knows Tyson - is that Tyson is giving Sebastian (under the pseudonym of Zachary M. Cohen) a penthouse apartment: one owned and protected by the web, somewhere he could be comfortable and supplied with everything he needed.
He doesn’t know if Sebastian would actually accept it, especially once he understood it was being supplied by the Moriarty Mirrors, but Tyson isn’t willing to leave him with nothing. Despite everything, he wants Sebastian to be happy.

How would Tyson be likely to propose?

When it comes to proposals, however, Tyson would likely be much more subdued. It would naturally depend on the person he was proposing to, but - with the most likely candidates having been Kim and Sebastian - it would be a safe bet to say that Tyson’s propose would be low key.
It certainly wouldn’t be going out to dinner, his anxiety is bad enough as it is, and definitely not a - completely - surprise proposal; talk of getting engaged in the future would have needed to be on the table first.
He would absolutely already have a ring on hand for this proposal, in his bag or pocket for months before he figured out exactly how to do it. With someone like Kim, who put a high value on craft and personal effort, Tyson would favour using one of his own metal gift boxes. With someone like Sebastian, who does care about skilled craftsmanship but puts a higher value on tradition, Tyson would use a normal ring box.
By the time he was ready to propose, Tyson would have a speech maybe thirty per cent written out and a general framework for a further twenty. Regardless of how much Tyson had figured out to say beforehand, it would all go out of the window once he started actually talking.
With Kimiko, Tyson would have likely opened by walking in, saying ‘catch’, and tossing the box over to her. Then after gauging the response, and likely getting a hopeful ‘yeah?’ and coy smile from Kim, Tyson would go down onto one knee and offer his proposal properly; and probably only get a few sentences in before she got impatient and just tackled him into a hug.
With Sebastian, Tyson would make more of an effort towards doing things more traditionally. He would take him out stargazing somewhere, having Sebastian sit on a rock whilst Tyson sat on the ground leant against his legs like he normally would. Then he could easily turn around to be knelt on one knee, and balance the box on Sebastian’s knee.

Gym Leader AU

In this verse, the Moriarty Mirrors were successful in disrupting Team Galactic’s plans. Though their attempts to destroy the world were thwarted, Team Galactic still maintain a presence in Sinnoh largely based out of the Stark Mountains.
As such, Tyson has been given a more permanent stationing in Sinnoh. Though occasionally send on missions outside of the region, Tyson primarily works in tandem with the web employees stationed in Jubilife City, whilst maintaining the cover of operating his own gym: left of Lake Verity and Canalave City.
Tyson maintains a safe house on Iron Island, guarded by Xiaolin, to retreat to whenever it proves necessary to escape The Colonel’s reach.
Always one to enjoy a puzzle, Tyson works hard to keep the exact typing of his gym a secret. At the end, he awards challengers the Perspective Badge and either the Sandstorm or Earthquake TM; depending on which he thinks will suit the challenger best. He changes his team to accommodate the experience level of his challengers and goes from single battles to double battles at higher levels.
In this verse, Tyson has the same Pokémon he normally does, but when necessary to work around the Distortion World shenanigans, he would have received certain Pokémon as gifts instead. He also has access to the Pokémon he uses in his gym.

Tyson goes out of his way to make sure people question what type his gym is. He makes sure that everyone knows there is a puzzle to his gym. Something to think about and making assumptions about ahead of time.
This philosophy even goes as far as the design of his gym badge. Perhaps it’s an animal face to hint at a normal-type gym, maybe it’s an evil laughing face for a ghost or dark-type gym, maybe its red for fire-type, or maybe you see an arrowhead for a hint at flying-type.
His puzzle begins before one enters the gym. To look at the gym from the outside, a large beehive building surrounding by Combee* should obviously mean a Bug-type gym, but perhaps that’s where they misdirect is: being in the middle of a forest might mean Grass-type instead.
Once inside the gym, trainers are greeted by an urban jungle and by Tyson himself. There he will explain how his gym works. Gym battles only take place in the arena and it’s the challengers’ job to find it. Then he’ll scamper away, parkouring up to the top of the central structure.
After getting equipped with a harness and attached to one of the Magnemite evolution line for safety, trainers are free to traverse the jungle maze of parkour obstacles and climbing walls as they wish. At this point, most piece together that this gym is either going to be Steel or Electric. Nope.
Once trainers reach the top, Tyson will not be there. Instead, Tyson’s partner Lucario will be standing there with the gym badge in his paw, then he’ll leap away into a closed-off area - inaccessible from any other direction - that leads lower and into the main structure. Some more climbing later, challengers will finally find the arena and Tyson.
The trust is that Tyson runs a Ground-type Gym. Even if someone knows Tyson well-enough to know that he favours ground-types, he does a lot to obfuscate that fact with Psychic and Steel-types used in his gym battles before the ground-types appear.
In this private arena, the trick of the gym is easy to keep secret and Tyson can use weather effects (Sandstorm and Rain Dance) to his heart’s content without risking washing anyone off or blinding them whilst they’re climbing. Though Tyson knows his family of Magnemite will keep anyone from falling, he made sure the floor was a foam fall pit, just in case.
Ever the scholar at heart, the message of Tyson’s gym for those who complete it is that one should never underestimate their opponent or make assumptions about them, to use one’s environment to their advantage whenever possible, and to never assume that one’s first goal will be the last.
At the end, there is a spiral slide to leave through or a death slide for those so inclined. Either will deposit the trainer into one of the many foam ball pits. Win or lose, Tyson always loves re-challengers and getting to see how people have improved with time.
* Though Combee are the most noticed wild Pokémon around Tyson’s gym (as most who enter will be given a free jar of honey for want of anything else to do with the horde of honey Tyson has acquired), Tyson used the area around his gym as a shelter for many types of Pokémon. One simply has to follow the path West from the gym to find that meadow.

Would Tyson rather create or destroy?

At the face value, it’s a rather simple question. Tyson isn’t a destructive person and he wants to improve the world, to add things to it rather than taking things out of the world.
However, if presented with a much simpler example, Tyson would almost always be more likely to choose to dismantle an object than to build one. He enjoys creating things, but Tyson is much more naturally inclined to take them apart to understand them.
Another factor is that Tyson is perfectly happy to sit back and leave the creation to someone else. He enjoys helping the Moriarty Mirrors in their projects and to create his own, but Tyson prefers to take the back seat and simply help the project; taking things apart and breaking them down into components, literally for the Moriarty Mirrors to use or as part of the planning process.
In his work for the web, Tyson is much more proud of tearing down other criminal empires than he is at the process made by the web.

Shadow

He would sit on the patio, next to one of the larger slate slabs, when the sun was shining where he could see the shadow most clearly. He would talk to his shadow. He never imagined it talking back, instead he thought it was listening to him and being able to talk to something was comforting.
He knew he could talk to his brother but there were times when he needed to talk and couldn’t find Jethro, because he was with friends or in private lessons with their father.
When Tyson would address his shadow, it came across more as one dictating a journal entry rather than talking with someone else. It was a way for Tyson to get his thoughts out into the world, without feeling as though he were directing them at the void pointless, by directing his words to a more literal and seemingly sympathetic void.
Before his energy was redirected into fencing, Tyson would shadow box with his shadow and he would practise his coordination by relying purely on the image of his shadow to catch a ball. He constructed a lot of complex games that relied on using his shadow.
As such, Tyson has developed a habit of smiling when he catches sight of his shadow that he’s never truly shaken. On days when he couldn’t see his shadow, Tyson wouldn’t play and that mindset has somehow stuck.

Antiques

The Delaney family manor is filled with valuable antiques.
…and that’s about as much as Tyson knows about it or them.
Though they had many similar lessons and were tutored on countless matters about being heirs to the Delaney family legacy, Jethro - the intended and blatantly favoured heir - learnt far more about the manor itself than Tyson got to.
He used to be jealous of the time Jethro got to spent with their father, learning more about their history. Now, Tyson simply wishes the manor came with more plaques to explain what he was looking at.

Apartment

Though small and difficult to navigate around, Tyson is very fond of his apartment.
In part, because it was a gift from the Moriarty Mirrors; Sunshine, specifically. Once a safe house for members of the web, Tyson can say with certainty that his apartment is well protected and full of surveillance should anyone manage to set inside.
More generally, Tyson likes having an apartment that’s a comfortable distance from the London underground, close enough to most things he needs, and quiet enough that Tyson can take his dogs out for walks without his anxiety getting too bad.
If he needed to, Tyson is - as ever - ready to uproot his life and leave everything behind. However, he is glad that Sebastian hasn’t forced him to move yet, even though he definitely knows where Tyson lives. For the time being, Tyson gets to have this one little piece of permanence.

Cooking

Though still not great at cooking food when heat is required, Tyson is best at cooking fish. He can usually guess how long they need on the spit before burning, but that’s simply having cooked them more when surviving on his own. A combination of ‘I need to eat this and live’ & ‘I need to eat this, not immediately throw it up again’ were strong teachers.
When it doesn’t require heat, Tyson can actually make rather delicious food. This includes being able to make different types of sushi.
Ice-cream is one of the things outside of ‘needs heat’ cooking that Tyson can actually make delicious versions of. 
Bread is amongst those foods that Tyson knows how to make and, whilst he’ll spend half the time whining about how the dough sticks to his hands, making bread is something Tyson genuinely enjoys doing. He finds it to be a very satisfying process and he’s always proud of what he makes. 
Though he usually favours buying fresh coffee when going to meet with the Moriarty Mirrors, Tyson will carry around a flask of coffee that he brewed himself too. Typically, Tyson will make Turkish brew coffee (finding the way it’s made rather relaxing), but he’s also been known to make a fantastic drip cold brew.
As a general rule of thumb, there are only a handful of foods that Tyson knows how to make, but - outside of fish - when Tyson knows how to cook something, he will make the most delicious, Michelin quality versions of those foods.
Despite his apathy towards eating and general disinclination towards all foods regardless of taste, Tyson actually has a rather good palette. He can tell when a different ingredient has been used in a dish, how to compliment flavours with each other, and what herb/spice is missing for most types of food straight away.
